Ingredients
- 2 cups all purpose flour
- 1 tbsp baking powder
- 1/2 tsp baking soda
- 3 tbsp sugar
- 1/2 tsp salt
- 2 large apples
- 3 large eggs
- 2 cups buttermilk
- oil for frying
Instructions
- Combine all of the dry ingredients in a large bowl.
- Peel the apples, then shred them using the large side of a grater.
- In a separate bowl, whisk together the eggs and buttermilk until smooth. Stir in the grated apples.
- Gently fold the dry ingredients into the buttermilk mixture until fully incorporated.
- Pour the oil into a skillet and place over medium heat. Once hot, turn down the heat to medium-low and drop small amounts of pancake batter into the oil.
- Cook the pancakes on each side until golden brown, flipping once bubbles appear on top. In between each batch, add a little more oil to the skillet. Serve the pancakes while they are warm and still have crispy edges. Enjoy!
