The Best Beet Smoothie
This beet smoothie combines fresh beetroot, ginger, orange juice, water, banana, and strawberries, blended into a smooth, vibrant drink. The use of fresh and frozen fruits creates a balanced texture that's both thick and refreshing. The ginger adds a subtle spicy note that complements the natural sweetness, making it a nutrient-rich option for a snack or light breakfast.
Ingredients
- 1/2 cup beet chopped (I don't peel it, fresh
- 1/2 inch piece ginger peeled, see note, fresh
- 1/2 cup orange juice
- 1/2 cup water
- 1 banana cut into pieces, frozen
- 1 cup strawberry frozen
Instructions
- Combine the beets, ginger, orange juice, and water in a blender and blend until very smooth, with no visible pieces of beet or ginger remaining. Add in the frozen strawberries and banana, and blend until smooth. Serve right away
- If you're using a high-speed blender, like the Vitamix, you can just add everything to the blender and blend it all together. It should break it down into a slushy texture effortlessly.
- This smoothie has the best taste and texture when you serve it right away, but you can save leftovers in the fridge for up to 24 hours. (I also like to freeze leftover smoothie in popsicle molds for a cool treat later!)
Notes
- If your blender is not high-speed, finely grate the ginger to avoid chunks in the smoothie.
- Leftover smoothie can be refrigerated for up to 24 hours or frozen into popsicles for later enjoyment.
