The Best Beet Smoothie

This beet smoothie combines fresh beetroot, ginger, orange juice, water, banana, and strawberries, blended into a smooth, vibrant drink. The use of fresh and frozen fruits creates a balanced texture that's both thick and refreshing. The ginger adds a subtle spicy note that complements the natural sweetness, making it a nutrient-rich option for a snack or light breakfast.

Description

The Best Beet Smoothie blends chopped fresh beets and peeled ginger with orange juice and water to start a smooth base without any visible chunks of beet or ginger. Frozen banana pieces and strawberries are then added to thicken and sweeten the drink, producing a smoothie with a balance of earthiness, citrus brightness, and berry sweetness. The fresh ginger provides a mild spicy kick, while the frozen fruit contributes a cool, slushy texture especially effective with a high-speed blender. This preparation suits those seeking a drink that is both hearty and refreshing.

Serving the smoothie immediately helps maintain its texture and flavor, but keeping leftover smoothie refrigerated up to 24 hours is possible. It can also be frozen into popsicles as an alternate treat. Various additions like hemp hearts, chia seeds, or plant-based milk can modify nutritional content or alter the creaminess without changing the fundamental method.

Ingredients

Servings
  • 1/2 cup beet chopped (I don't peel it, fresh
  • 1/2 inch piece ginger peeled, see note, fresh
  • 1/2 cup orange juice
  • 1/2 cup water
  • 1 banana cut into pieces, frozen
  • 1 cup strawberry frozen

Instructions

  1. Combine the beets, ginger, orange juice, and water in a blender and blend until very smooth, with no visible pieces of beet or ginger remaining. Add in the frozen strawberries and banana, and blend until smooth. Serve right away
  2. If you're using a high-speed blender, like the Vitamix, you can just add everything to the blender and blend it all together. It should break it down into a slushy texture effortlessly.
  3. This smoothie has the best taste and texture when you serve it right away, but you can save leftovers in the fridge for up to 24 hours. (I also like to freeze leftover smoothie in popsicle molds for a cool treat later!)

Notes

  • If your blender is not high-speed, finely grate the ginger to avoid chunks in the smoothie.
  • Leftover smoothie can be refrigerated for up to 24 hours or frozen into popsicles for later enjoyment.
  • Additional ingredients like hemp hearts, chia seeds, or plant-based milk can be added to change the texture and nutrition.
