This delicious Cauliflower Mash is made with cream cheese and butter, and whipped until it is smooth. It's the perfect keto side dish for holidays!

Ingredients
- 2.5 pounds cauliflower rice
- 3 ounces cream cheese
- 1 ounce butter
- ½ teaspoon salt
- ⅛ teaspoon pepper
Instructions
- Place your cauliflower rice in a large pot and fill with enough water to cover the cauliflower. Cover with a lid and cook over medium high heat for approximately 10 minutes.
- Pour the cauliflower into a fine mesh strainer allowing all of the water to drain out. Press on the cauliflower lightly to remove as much water as possible.
- Place the cauliflower back in the pot and use the Braun MultiQuick 5 Vario Hand Blender on medium-high speed to puree the cauliflower into a smooth mash.
- Add butter, cream cheese, salt, and pepper and continue to use the hand blender to puree until it is smooth.
- Serve warm.
