Ingredients

  • 1 tick (1/2 cup, 115g) butter softened, unsalted
  • 1/3 cup (57g) coconut sugar
  • 1 1/2 Tbsp (22ml) pure maple syrup
  • 1 large egg
  • 2 tsp vanilla extract pure
  • 1 cup (120g) gluten-free flour
  • 3/4 tsp baking powder
  • 1/4 tsp salt + more for sprinkling, sea salt
  • 1 cup (175g) semi sweet chocolate chips or sugar-free chocolate chips***

  1. In a stand mixer, cream together the butter, coconut sugar, pure maple syrup, and pure vanilla extract until well-combined. Beat in the egg.
  2. Add the gluten-free flour, baking powder, sea salt, and cinnamon (if you’re adding it). Turn the mixer on medium-high to high speed and beat until a thick dough forms. Add in the chocolate chips and beat until combined.
  3. Refrigerate the dough at least 30 minutes before preheating the oven to bake.
  4. When you're ready to bake the cookies, preheat the oven to 375 degrees F.
  5. Drop dough onto a parchment-lined or sprayed baking sheet and bake for 8 to 11 minutes (I go with 9 minutes on the dot). 
  6. Remove from the oven and sprinkle with sea salt. Allow cookies to cool at least 5 minutes before devouring.

Notes

  • Butter can be substituted with ghee for a slightly different flavor and texture.
  • Use your preferred type of chocolate chips, such as milk, dark, white, dairy-free, or peanut butter chips.
  • Replacing coconut sugar with brown sugar is possible if desired.
  • Chill the dough at least 30 minutes before baking to improve cookie shape and texture.
  • Sprinkle sea salt on cookies just after baking to enhance flavor contrasts.
