The BEST Gluten-Free Chocolate Chip Cookies

The BEST Gluten-Free Chocolate Chip Cookies offer a tender, chewy texture with a balanced sweetness from coconut sugar and maple syrup. These cookies combine softened butter, gluten-free flour, and semi-sweet chocolate chips, delivering a classic chocolate chip cookie flavor without gluten. A sprinkle of sea salt on top adds a touch of contrast to the sweetness. The recipe's brief refrigeration step helps the dough hold its shape, producing evenly baked cookies with a slightly crisp edge and soft interior.

Description

The BEST Gluten-Free Chocolate Chip Cookies use softened unsalted butter creamed with coconut sugar and pure maple syrup, which gives them subtle depth and moistness. Gluten-free flour, baking powder, and salt are combined to create a dough that is thick and supports the chocolate chips well. After mixing, the dough is chilled before baking at 375°F, which helps the cookies bake evenly and develop a pleasant texture. A sprinkle of sea salt after baking enhances the sweet and rich flavors.

The cookies are versatile enough for an everyday treat or special occasions where gluten must be avoided. Their texture balances between crispy edges and a tender center, making them satisfying to eat fresh. Variations in types of chocolate chips allow for customization of sweetness and flavor.

This recipe works well using alternative sugars like brown sugar and can be made with ghee instead of butter. Refrigerating the dough ensures better dough consistency and improved cookie structure during baking. They should be cooled for at least five minutes after baking before eating to allow them to set properly.

Ingredients

Servings
  • 1 tick (1/2 cup, 115g) butter softened, unsalted
  • 1/3 cup (57g) coconut sugar
  • 1 1/2 Tbsp (22ml) pure maple syrup
  • 1 large egg
  • 2 tsp vanilla extract pure
  • 1 cup (120g) gluten-free flour
  • 3/4 tsp baking powder
  • 1/4 tsp salt + more for sprinkling, sea salt
  • 1 cup (175g) semi sweet chocolate chips or sugar-free chocolate chips***

Instructions

  1. In a stand mixer, cream together the butter, coconut sugar, pure maple syrup, and pure vanilla extract until well-combined. Beat in the egg.
  2. Add the gluten-free flour, baking powder, sea salt, and cinnamon (if you’re adding it). Turn the mixer on medium-high to high speed and beat until a thick dough forms. Add in the chocolate chips and beat until combined.
  3. Refrigerate the dough at least 30 minutes before preheating the oven to bake.
  4. When you're ready to bake the cookies, preheat the oven to 375 degrees F.
  5. Drop dough onto a parchment-lined or sprayed baking sheet and bake for 8 to 11 minutes (I go with 9 minutes on the dot).
  6. Remove from the oven and sprinkle with sea salt. Allow cookies to cool at least 5 minutes before devouring.

Notes

  • Butter can be substituted with ghee for a slightly different flavor and texture.
  • Use your preferred type of chocolate chips, such as milk, dark, white, dairy-free, or peanut butter chips.
  • Replacing coconut sugar with brown sugar is possible if desired.
  • Chill the dough at least 30 minutes before baking to improve cookie shape and texture.
  • Sprinkle sea salt on cookies just after baking to enhance flavor contrasts.
