Ingredients

  • 4 avocado ripe
  • lemon or about 3 tablespoons, juice of 1
  • 2 vine ripe tomato seeded, small diced
  • ½ yellow onion peeled, small diced, large
  • 1 garlic finely minced clove
  • 1 jalapeno pepper seeded and small diced
  • 1/4 cup fresh cilantro finely minced
  • 1 teaspoon cumin ground
  • salt to taste
  • black pepper to taste

  1. Holding the avocado in one hand, use a chef knife in the other hand and press down into the avocado until you reach the seed in the center and roll it around the knife until the two cuts meet.
  2. Twist the avocado to separate it in half, and using your knife gently chop into the avocado seed while holding it with a towel underneath it with your other hand. Twist it and remove it.
  3. Scoop the avocado out away from the shell.
  4. Smash the avocado with lemon juice in a large bowl until smooth but still has a few small chunks.
  5. Add tomatoes, onions, garlic, jalapeños, lemon juice, cilantro, cumin, salt, and pepper.
  6. Fold everything together using a rubber spatula. Adjust any seasonings with more lemon juice, cumin, salt, or pepper.

Notes

  • Prepare and serve guacamole immediately for best freshness and flavor.
  • Store in an airtight container with lemon juice covering the surface to prevent browning, refrigeration up to 3 days.
  • Tomato varieties such as Roma or cherry can be used based on availability.
  • Increase spice level by substituting jalapeño with habanero pepper.
  • Omitting tomatoes is optional according to preference.
  • Do not freeze guacamole as it negatively affects texture.
