The Best Harvest Stuffed Sweet Potatoes

These harvest stuffed sweet potatoes are simply the best! Cozy, deliciously spiced-sweet cool weather flavors, this recipe for stuffed sweet potatoes is so easy to make and ready to go in no time at all.

Ingredients
- 4 sweet potatoes
- 2 tbsp olive oil
- 1 small red onion diced
- 1 lb ground chicken or turkey
- 1 tsp garlic powder
- 2 tsp Italian seasoning
- salt and pepper to taste
- 1 large honey crisp apple chopped
- 1 cup dried cranberries
- 3 handful kale chopped
- ½ cup pepper jack cheese shredded
- green onions chopped, for garnish
Instructions
- Poke holes in the sweet potatoes with a fork, and then microwave for 10-15 minutes. (See notes for oven baked sweet potatoes)
- Cook onion over medium heat with olive oil for 4-5 minutes, until soft and fragrant.
- Add in ground chicken and spices; breaking apart and cooking until browned.
- Mix in apples, dried cranberries, and chopped kale. Continue cooking about 10 more minutes.
- Make a slit in the sweet potatoes and fill with the chicken and apple mixture. Sprinkle over pepper jack cheese and place under the broiler for 2-3 minutes, until cheese is melted. Garnish with green onions and serve.
Notes
- For sweet potatoes in the oven: Preheat oven to 400 degrees. Poke holes in the sweet potatoes with a fork and wrap in tin foil. Bake for 1 hour.
