Ingredients

  • 1 1/2 cups almond flour
  • 1/2 teaspoon baking soda
  • pinch salt
  • 1/4 cup brown swerve
  • 1/4 cup Granular swerve
  • 1/2 cup butter (at room temperature)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup Keto Chocolate Chips (Click HERE for my favorite brand!)

Instructions

  1. Whisk dry ingredients in a small bowl. Set aside.
  2. Beat sugars and butter for 2-3 minutes or until pale. Add egg and vanilla and beat another minute. Switch to a spatula or wooden spoon and stir in dry ingredients and chocolate chips until dough forms.
  3. Refrigerate the dough for 20-30 minutes or over-night (optional step).
  4. While the cookies are chilling in the fridge, Pre-heat oven to 325F. Scoop cookies using a medium cookie scoop and place them on a baking sheet. Flatten with a spoon.
  5. Bake for 10-12 minutes or until golden.
  6. Cool for at least 5 minutes before removing from the cookie sheet.
