These are the best Mocha Muffins you will ever try! They're filled with coffee and chocolate and are perfect for a gathering with family and friends!

Ingredients

  • 1 stick unsalted butter Room Temperature
  • 3/4 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 egg Room Temperature
  • 2/3 cup plain greek yogurt Room Temperature
  • 1/4 cup milk
  • 1/2 cup brewed coffee Cold
  • 2 cups all purpose flour
  • 1/2 cup cocoa powder
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup mini chocolate chips

Instructions

  1. Preheat the oven to 350F. Line a muffin pan with liners. 
  2. Mix the butter, granulated sugar and vanilla extract until light and fluffy. 
  3. Mix in the egg and plain Greek yogurt until creamy. 
  4. Add in milk. Mix until fully combined. 
  5. In another bowl, whisk together the flour, cocoa powder, baking powder, baking soda and salt. 
  6. Start adding the flour mixture slowly and alternately with the coffee and mix slowly. Don't over mix the batter.  
  7. Once all the ingredients are mixed together, fold in the chocolate chips slowly. 
  8. Scoop the batter into the liners using an ice cream scoop, fill each liner 3/4 full. 
  9. Top with some extra chocolate chips. 
  10. Bake in the oven for 18-20 minutes until a toothpick inserted in the muffin comes out clean. 
  11. Take the muffins out of the oven. Cool for 20 minutes and the serve. 

Notes

  • You can use mini chocolate chips, regular chocolate chips or chocolate chunks. The amount you use would be according to your preference. The recipe calls for approximately one cup. 
  • You can use full fat or skim milk in this recipe. 
  • you can store these mocha muffins in an airtight container for up to 4 days. 
  • This recipe makes 14 muffins but you can squeeze it into 12 if you don't want to use your muffin tin twice. Just add a little bit more batter to each liner.
