The Best Ramen Noodle Salad

Crunchy ramen noodles are scattered over a cabbage slaw with a sweet and tangy soy dressing. Your taste buds will be dancing from the flavors of this ramen salad!

Ingredients

  • 3 oz ramen noodles
  • 1/3 cup slivered almonds
  • 1/3 cup raw sunflower seeds
  • 2 tbsp raw sesame seeds
  • 4 cups green cabbage shredded
  • 3 cups purple cabbage shredded
  • 2 large carrots shredded
  • 1/2 cup green onions sliced
Ramen Salad Dressing
  • 1/3 cup olive oil
  • 1 tbsp sesame oil
  • 3 tbsp white vinegar
  • 1 tbsp white sugar
  • 2 tbsp soy sauce low sodium

Instructions

  1. Break the ramen noodles into small pieces and place on a baking sheet. Add the slivered almonds, sunflower seeds, and sesame seeds. Roast at 350°F for 10 minutes, then set aside to cool completely.
  2. Shred the cabbage and carrots, and slice the green onions.
  3. Place all the veggies in a large bowl and toss to combine.
  4. Sprinkle the crunchy ramen mix on top of the veggies.
  5. Combine the dressing ingredients together. Drizzle over the salad right before serving. Enjoy!
