The Best Sweet Potato Shepherd’s Pie Recipe

Ingredients

for the mashed sweet potatoes
  • 2 lbs sweet potatoes peeled and cut into cubes
  • 2 tbsp butter
  • salt and pepper to taste
for the filling
  • 1 lb ground beef
  • 1 small onion finely diced
  • 3-4 garlic cloves minced
  • 1 bag frozen mixed vegetables
  • ¼ cup dried cranberries
  • ¼ cup tomato paste
  • ½ tsp smoked paprika
  • 1 tsp ground thyme
  • salt and pepper to taste
  • ½ cup broth

  1. Preheat your oven to 420 degrees F
  2. Boil the sweet potato cubes in a pot of salted water until tender, about 10-15 minutes, or until tender. Drain the potatoes and return them to the pot.
  3. Mash the potatoes with butter, salt, and pepper until smooth and creamy.
  4. In a large skillet, cook the ground beef over medium heat until slightly browned. Remove any excess fat. Add the diced onion and minced garlic to the skillet. Saute for about 3-5 minutes, until onions are softened. 
  5. Stir in the frozen mixed vegetables, dried cranberries, tomato paste, and spices. Season with salt and pepper to taste; add in the broth. Simmer for 10-12 minutes, until the mixture thickens slightly.
  6. Transfer the meat and vegetable mixture to a baking dish. Spread the mashed sweet potatoes evenly over the top.
  7. Bake for 20-25 minutes, or until sweet potato topping is just beginning to brown. Allow the pie to cool a few minutes before serving. Enjoy!
