Ingredients
for the mashed sweet potatoes
- 2 lbs sweet potatoes peeled and cut into cubes
- 2 tbsp butter
- salt and pepper to taste
for the filling
- 1 lb ground beef
- 1 small onion finely diced
- 3-4 garlic cloves minced
- 1 bag frozen mixed vegetables
- ¼ cup dried cranberries
- ¼ cup tomato paste
- ½ tsp smoked paprika
- 1 tsp ground thyme
- salt and pepper to taste
- ½ cup broth
Instructions
- Preheat your oven to 420 degrees F
- Boil the sweet potato cubes in a pot of salted water until tender, about 10-15 minutes, or until tender. Drain the potatoes and return them to the pot.
- Mash the potatoes with butter, salt, and pepper until smooth and creamy.
- In a large skillet, cook the ground beef over medium heat until slightly browned. Remove any excess fat. Add the diced onion and minced garlic to the skillet. Saute for about 3-5 minutes, until onions are softened.
- Stir in the frozen mixed vegetables, dried cranberries, tomato paste, and spices. Season with salt and pepper to taste; add in the broth. Simmer for 10-12 minutes, until the mixture thickens slightly.
- Transfer the meat and vegetable mixture to a baking dish. Spread the mashed sweet potatoes evenly over the top.
- Bake for 20-25 minutes, or until sweet potato topping is just beginning to brown. Allow the pie to cool a few minutes before serving. Enjoy!
