  • 2 cups chicken broth
  • 1 tablespoon vegetable oil
  • 2 cloves garlic minced
  • ¼ cup diced onion
  • 1 jalapeno chopped
  • ¼ teaspoon cumin
  • ¼ cup tomato sauce
  • 1 cup long grain rice
  • cilantro to garnish

Instructions

  1. In a sauce pan add vegetable oil, garlic, onion, jalapeno, cumin, chicken broth, and tomato sauce. Heat over medium high heat and bring to a boil.
  2. Once the chicken broth mix is boiling add the long grain rice. Reduce heat to a simmer and cook covered for 15 minutes.
  3. When the rice is done fluff with a spoon or a fork and serve immediately with fresh cilantro.
