The Ultimate Corned Beef Bagel Sandwich

The Ultimate Corned Beef Bagel Sandwich – Sautéed onions, pan-fried corned beef slices, melted cheese, and garlicky dill pickles all layered between a toasted Everything bagel with a creamy mustard spread.  Leftover corned beef never tasted so good!

Ingredients

  • 1 bagel Everything bagel is my favorite for this
  • leftover corned beef sliced
  • 1 or 2 slices of cheese
  • 1/2 tbsp. butter
  • sliced yellow onion as much as you desire
  • 4 or 5 pickle chips
  • mayo
  • Dijon mustard

  1. Sear your sliced corned beef in a hot skillet to kind of crisp up the exterior - it adds a fantastic flavor and texture! Scoot that to one side of the skillet and sauté the onion on the other side of the pan. When the onion has softened, top the corned beef with your favorite sliced cheese. I love pepper jack! Let the cheese melt by covering your skillet with a lid or by placing a baking sheet over it until the cheese is all deliciously melty. 
  2. Next, toast your bagel, then spread a little mayo and Dijon mustard on both sides of the bagel. Place pickle slices on the bottom half of the bagel. Take a large spatula and carefully lift the cheesy corned beef out of the pan on onto your bagel bottom. Top the corned beef with the sautéed onions. Cut the sandwich in half or eat whole. Enjoy!
