Ingredients

  • 2 cups flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon cream of tartar
  • 1 cup butter softened
  • 2/3 cup granulated sugar
  • 1 egg
  • 4 3-ounce boxes of Jello any flavors (I used berry blue, strawberry, orange, and lime)

Instructions

    Cup of Yum
  1. Preheat the oven to 350 degrees F. Line your cookie sheets with parchment paper or silicone baking mats.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and cream of tartar. Set aside.
  3. In a separate bowl, beat the butter and sugar until light and fluffy. Then add the egg and beat to combine.
  4. Add the flour mixture and beat until well combined.
  5. Separate the dough into four sections. Add 2 tablespoons of Jell-o to each section and work it into the dough with your hands. Add food coloring for brighter colors, if desired.
  6. When all the colors are mixed, pinch off about 1 teaspoon of dough from each color and lightly squeeze the pieces together in your hand.
  7. Roll dough into balls and place them on the prepared baking sheet, keeping them about 2 inches apart. You should end up with about 1-inch balls. Lightly press the cookie dough balls down with your hand to flatten them.
  8. Bake for 8 to 10 minutes in the preheated oven until the edges start to brown. Leave the cookies on the baking sheet for five minutes, then move them to a wire rack to cool completely.

Notes

  • Full-sugar Jello works best. The texture is different if you use sugar-free Jello.
  • Choose fruity flavors that blend well together. I usually stick to fun flavor combinations like cherry, lime, and lemon. If you combine watermelon and cranberry, you might not love the resulting cookies!
  • Roll the cookies in sparkling sugar for a glittery touch.
  • You can add a few drops of food coloring to make the colors brighter.
