Tigernut (chufa) sugar cookies
An easy basic recipe for tigernut flour cookies. Grainfree, nutfree and legumefree. So not only glutenfree but also vegan, AIP paleo and Medical Medium friendly.
Ingredients
- 1 cup Tigernut Flour ground chufa
- 1 tbsp water warm
- ¼ cup coconut oil
- ⅓ cup coconut flower sugar
- 1 pinch sea salt or more to taste, Celtic variety
Instructions
- Prepare a oven tray and line it with parchment paper. Preheat the oven to 360F or 180C.
- Mix the flour, sugar and salt together.
- Add the coconut oil and a tablespoon of warm water. The warm water will soften the coconut oil a bit.
- Knead with your hands until you can make a ball. Divide the ball into small balls.
- Press the balls into cookie shapes. If necessary, you can fill the cracks with wet fingers for nice edges.
- Put the cookies in the oven for about 15 minutes. The time depends a bit on the thickness. The thicker, the longer they need. Thin cookies burn faster. They can brown a bit on the edges.
- Let the cookies cool for at least half an hour. Only then will they become hard.
