TikTok Ramen

Ingredients

  • 1 instant ramen package discard seasoning packet
  • 1 tbsp unsalted butter
  • 1 tsp minced garlic 
  • 1 tsp brown sugar
  • 2 tsp soy sauce
  • 1/2 /2 tsp cooking oil
  • 2 large eggs
  • 1/4 /4 tsp kosher salt
  • everything but the bagel seasoning to taste
  • red pepper flakes to taste
  • Sliced scallions optional topping

  1. Cook noodles according to package instructions to al dente texture and then drain. Optionally if you want to cook the noodles and heat the sauce simultaneously, you can leave the noodles in the water and be ready to fish them out into the sauce pan (when its ready) so they don't overcook.
  2. Preheat a small pan over medium-low heat for a little bit, then add the butter and garlic until very lightly browned. Then add the brown sugar and soy sauce. If you want spicier ramen, you can add the red pepper flakes at this point. Start with a pinch at a time and taste it.
  3. Add the noodles and stir to evenly coat.
  4. Push the noodles all the way to one side (or remove completely), add the oil and let it heat a bit. Crack eggs into a bowl, add salt and quickly whish with a whisk or fork. Pour in the eggs and scramble until cooked--I like mine still a bit jiggly inside. Brea it apart a bit then mix with the noodles.
  5. Add Everything But The Bagel Seasoning and red pepper flakes to taste and serve immediately.
