Toasted Ravioli Chicken Caesar Salad (Easy Dinner!)

Ingredients

for the pan toasted ravioli
  • 1 package ravioli boiled for 1-2 minutes
  • 1 tbsp olive oil
  • fresh lemon juice from ½ lemon plus wedges for serving
  • salt and pepper to taste
  • grated parmesan optional for serving
for the chicken caesar salad
  • 2 cups Cooked Chicken Breast diced (you can use rotisserie chicken for convenience)
  • 2 cups romaine lettuce chopped
  • ½ cup caesar dressing store-bought or homemade
  • ¼ cup grated Parmesan cheese
  • fresh lemon juice from ½ lemon
  • croutons optional

Instructions

  1. Boil ravioli for 1-2 minutes.
  2. Heat olive oil in a large skillet, add ravioli and toast 1-2 minutes per side, or until slightly brown and crispy. Squeeze lemon juice over before removing the ravioli from the pan and season with salt and pepper to taste.
  3. Into a medium sized bowl, combine diced chicken, romaine lettuce, Caesar dressing, grated parmesan cheese, and top with crusty croutons, if desired. Sprinkle over the lemon juice.
  4. Serve alongside the toasted ravioli with lemon wedges and extra parmesan cheese, if desired.
