Ingredients
for the pan toasted ravioli
- 1 package ravioli boiled for 1-2 minutes
- 1 tbsp olive oil
- fresh lemon juice from ½ lemon plus wedges for serving
- salt and pepper to taste
- grated parmesan optional for serving
for the chicken caesar salad
- 2 cups Cooked Chicken Breast diced (you can use rotisserie chicken for convenience)
- 2 cups romaine lettuce chopped
- ½ cup caesar dressing store-bought or homemade
- ¼ cup grated Parmesan cheese
- fresh lemon juice from ½ lemon
- croutons optional
Instructions
- Boil ravioli for 1-2 minutes.
- Heat olive oil in a large skillet, add ravioli and toast 1-2 minutes per side, or until slightly brown and crispy. Squeeze lemon juice over before removing the ravioli from the pan and season with salt and pepper to taste.
- Into a medium sized bowl, combine diced chicken, romaine lettuce, Caesar dressing, grated parmesan cheese, and top with crusty croutons, if desired. Sprinkle over the lemon juice.
- Serve alongside the toasted ravioli with lemon wedges and extra parmesan cheese, if desired.
