  • 1 sheet puff pastry, homemade or store bough, trimmed to a 9 x 13 inch rectangle
  • 4-6 eggs
  • 1/2 cup cheddar cheese, grated
  • 7 trips thick cut bacon, pre-cooked
  • 1/2 cup cooked spinach, fresh or frozen
  • 1 egg, lightly beaten ( brushing the pastry for an extra golden and rich crust)
