Tomatillo Salsa

Ingredients

  • 1 pound whole tomatillos, husks removed
  • 1/2 white onion, skin removed
  • 1/2 jalapeño, stemmed and deseeded
  • 2 cloves garlic
  • ½ cup fresh cilantro
  • 1 teaspoon sugar
  • 2 teaspoons lime juice
  • 1 teaspoon coarse salt, plus more to taste

Instructions

  1. Heat broiler to high and line a baking sheet with parchment paper.
  2. Arrange tomatillos, onion, jalapeno, and garlic on the prepared baking sheet. Roast under the broiler until charred on all sides. Broil for about 10-15 minutes, turning every few minutes.
  3. Transfer the roasted tomatillos, onion, jalapeno, and garlic to a food processor. Then, add cilantro, sugar, lime juice, and salt. Purée until smooth and season with additional salt if needed.
