Tomato and Cucumber Salad

A super simple Tomato and Cucumber Salad with red onion and a splash of vinegar, vegetable oil and nicely seasoned with salt, a refreshing and delicious summer salad that is bursting with fantastic flavours. No unnecessary heavy dressings, no fancy ingredients, this salad is healthy, nutritious and so delicious in its simplicity.

Ingredients

  • 8 tomatoes on the vine
  • 1 English cucumber
  • ½ red onion
  • ½ teaspoon coarse salt
  • 1 tablespoon cider vinegar
  • 1 tablespoon vegetable oil

Instructions

  1. Peeled and chop the cucumber and onion, and chop the tomatoes.
  2. Add them to a bowl together with the salt, vinegar and oil.
  3. Toss well to combine.
  4. Refrigerate until ready to serve.

Notes

  • The fresh tomatoes and cucumber tend to release quite a bit of liquid once the salad is made, so if you are planning to take this salad to a bbq or picnic, make sure you transfer it to a good tupperware with a lid that closes well, or it will leak everywhere.
  • Don't drain the liquid though, if you have some crusty bread, use that to dip into those juices, trust me, it's the best thing you can have! Nothing gets lost with salads!
