Ingredients
- 4 medium tomatoes
- 8 large radishes
- 2 large avocados
- 1 English cucumber
- 1 red onion
- 2 tbsp fresh parsley chopped
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1/2 tbsp salt to taste
- 1 tbsp pepper
Instructions
- In a small bowl, combine together the oil, lemon juice, salt, and pepper. Whisk together and set aside.
- Cut the tomatoes, radishes, avocados, and cucumbers into half-ring bite-size pieces. Place all the ingredients into a bowl.
- Cut the onion into very thin quarter ring pieces and add to the rest of the vegetables. Drizzle the dressing over the vegetables.
- Toss everything together and garnish with parsley. Serve immediately.
