Tomato avocado salad

A simple tomato avocado salad is the easiest, most delicious healthy side dish recipe and perfect when made with juicy, ripe tomatoes and creamy avocado.

Ingredients

  • 500 g (1lb) tomatoes roughly chopped
  • 2 avocados peeled and chopped
  • 1 small red onion thinly sliced
For the lemon basil vinaigrette
  • 3 tbsp fresh basil finely chopped
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • salt and pepper to taste

Instructions

  1. Place the tomatoes in a large bowl then season generously with salt and pepper.
  2. Add the avocado and red onion.
  3. Mix together all the dressing ingredients and pour over the salad.
  4. Gently toss to coat the vegetables in the dressing then serve.
