Tomato Basil Bruschetta

This tomato basil bruschetta recipe is a recreation of BJ's Restaurant favorite, it's healthy and easy to make in only 10 minutes!

Ingredients

  • 6 roma tomatoes diced
  • ½ cup red onion diced
  • 3 cloves garlic minced
  • ¼ cup fresh basil chopped
  • ¼ cup extra virgin olive oil
  • 2 tablespoons balsamic vinegar
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons Parmesan Cheese grated

Instructions

    Cup of Yum
  1. Combine the first 8 ingredients in a large bowl.
  2. Sprinkle the parmesan cheese on top.
  3. If serving with a toasted baguette, place the baguette in the oven, set at 350°F for 5 minutes.
  4. Slice the baguette and top with the tomato basil bruschetta.

Notes

  • For a little something extra, feel free to drizzle balsamic reduction over the bruschetta before serving.
