Tomato Basil Chicken

Ingredients

  • 4 boneless skinless chicken breasts
  • 1 can crushed tomatoes
  • 1 cup cherry tomatoes halved
  • 1 ½ tablespoon tomato paste
  • 3 cloves garlic minced
  • 1 tablespoon olive oil
  • 1 shallot minced
  • 1 teaspoon red pepper flakes
  • ½ cup heavy whipping cream
  • ½ cup fresh basil
  • ½ cup Parmesan shavings

Instructions

  1. Get out and measure all of your ingredients.
  2. Season the chicken: Season both sides with garlic powder, pepper, and onion powder over a plate.
  3. Rub the seasoning into the chicken.
  4. Sear the chicken: Add olive oil to a skillet over medium high heat. Sear the chicken 4 minutes per side. Remove from heat and set aside.
  5. Cook the tomato sauce: Add tomato paste, minced garlic, and minced shallot to the skillet.
  6. Sauté for 1 minute.
  7. Add crushed tomatoes, cherry tomatoes, and red pepper flakes.
  8. Cook for 5 minutes. Use a potato masher to crush cherry tomatoes.
  9. Add heavy whipping cream.
  10. Stir until blended.
  11. Add the chicken back to the skillet and reduce heat to medium. Cook for 10 minutes. Check to be sure chicken reaches an internal temp of 165 degrees.
  12. Garnish with chopped basil.
  13. Add parmesan shavings.
  14. Serve chicken with a scoop of tomato sauce over the top and enjoy every bite!
