Tomato Basil Orzo Soup

Ingredients

  • 2 tablespoons butter
  • 1 tablespoon minced garlic 
  • ¼ cup packed basil leaves finely chopped
  • 2 ounce cans tomato sauce
  • 2 cups chicken broth OR vegetable broth
  • 2 cups heavy cream OR fat free half and half
  • 2 cups cooked orzo pasta
  • salt and pepper to taste

Instructions

  1. In a large pot melt butter over medium heat. Add garlic and basil and saute til fragrant.
  2. Add tomato sauce, broth, and milk. Bring to a boil, then reduce to a simmer and allow to cook for about 10 minutes.
  3. Stir in orzo and salt and pepper to taste. Garnish with additional basil if desired and serve.

Notes

  • We like to serve this soup alongside a grilled cheese for a filling meal.
