Ingredients

  • 2 cups cherry tomatoes halved
  • 1 large english cucumber sliced into half-moons
  • 8 ounces fresh mozzarella cheese cubed
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon balsamic vinegar
  • 1 clove garlic minced
  • salt to taste
  • freshly ground black pepper to taste
  • 1/4 cup fresh basil leaves chopped

  1. In a large bowl, combine halved cherry tomatoes, sliced cucumber, and cubed mozzarella cheese.
  2. In a small bowl, whisk together extra-virgin olive oil, balsamic vinegar, and minced garlic to create the dressing. Season with salt and freshly ground black pepper to taste.
  3. Pour the dressing over the salad ingredients and gently toss to coat evenly. Sprinkle with chopped fresh basil leaves before serving.
