Tomato Cucumber Salad
This Tomato Cucumber Salad combines fresh green bell pepper, cherry tomatoes, English cucumber, ripe avocado, and herbs tossed in a zesty dressing of red wine vinegar, avocado oil, and lemon juice. The crisp vegetables and creamy avocado create a refreshing texture contrast, while the citrusy dressing balances the flavors. It serves well as a light side dish for 2-4 people, easy to prepare in minutes.
Ingredients
- 1 green bell pepper
- 1.5 cups cherry tomato quartered
- 1 English cucumber
- 1-2 avocado ripe
- 1 TBSP red wine vinegar
- 1/8-1/4 cup avocado oil or your favorite healthy oil
- 1 lemon juiced
- salt to taste
- black pepper to taste
- 2 TBSP cilantro pick your favorite!, or parsley
Instructions
- You'll only need a few minutes to toss this salad together, cue happy dance!
- Chop your veggies, removing any seeds/skin/stems needed.
- If you're using an english (hothouse) cucumber you can keep the seeds and skin on, but if you're using a standard cuke remove the skin and seeds.
- Whisk together oil, vinegar, lemon juice, salt, pepper, and fresh herbs of your choosing and pour over salad.
- Toss to coat and dig in!
- Recipe yields 4 small sides or 2 larger portions.

- Adjust lemon juice and red wine vinegar amounts to suit your taste and the lemon's ripeness.
- Optionally add a sprinkle of sugar to balance acidity with tomato sweetness.
