Tomato Jam

This tomato jam packs both sweet and savory flavors and is made with juicy summer tomatoes and a hint of thyme.

Ingredients

  • 1 ½ pounds Grape or Cherry Tomatoes about 2 pints
  • 3 tablespoons minced shallot about 1 small shallot
  • 1 teaspoon minced garlic  1-2 cloves
  • ¼ cup coconut sugar or organic cane/brown sugar
  • ⅓ cup white wine vinegar
  • 2 tablespoons water
  • 1 teaspoon salt
  • 1 teaspoon dried thyme

  1. In a medium saucepan, combine the tomatoes, minced shallot, minced garlic, coconut sugar, vinegar, water, and salt. Bring the mixture to a low boil for about 5 minutes. Reduce to a simmer and cook for about 30-45 minutes, stirring intermittently, until it has reduced to a thick jam-like consistency.
  2. Stir in the dried thyme then set aside to cool completely. Transfer the jam to a sealed jar or container and store in the refrigerator for up to 1 week.
