Tomato Mozzarella Bruschetta

Tomato Mozzarella Bruschetta features crisp toasted bread topped with a mix of diced Roma tomatoes, finely diced purple onion, sliced fresh basil, and slices of mozzarella cheese. The combination is seasoned with olive oil, salt, pepper, and finished with a drizzle of balsamic vinegar. This creates a balance of tender, creamy, and fresh flavors with a slight acidity and crunch from the toasted bread, perfect as an appetizer or light snack.

Ingredients

  • 8 lices vienna bread or comparable wood fired bread, crusty
  • 8 Roma tomato
  • 1 purple onion small
  • 1/2 bunch basil leaves
  • 4 balls mozzarella cheese large bocconcini or regular mozzarella balls can be used as well, buffalo milk
  • olive oil extra virgin
  • sea salt flakes
  • black pepper freshly cracked
  • balsamic vinegar to drizzle

Instructions

  1. Slice the balls of mozzarella cheese into 4 slices each.
  2. Cut Roma tomatoes into lengthwise quarters (remove/discard seeds and juicy pulp).
  3. Dice remaining tomato flesh.
  4. Finely dice the purple onion.
  5. Slice the basil finely.
  6. Combine above ingredients with a few pinches sea salt, a few turns of the pepper mill and a few tbsps olive oil.
  7. Lightly toast or grill the bread slices, once toasted, rub one side with a peeled garlic clove.
  8. Place tomato mixture on bread slices and top with the slices of mozzarella.
  9. Drizzle with balsamic vinegar and serve immediately.
