Tomato Mozzarella Bruschetta
Description
This bruschetta uses crusty bread such as Vienna or wood-fired bread, lightly toasted and rubbed with a peeled garlic clove to impart subtle garlic flavor. The topping combines diced Roma tomatoes (with seeds and pulp removed), finely diced purple onion, and sliced basil leaves, mixed with extra virgin olive oil and seasoning of sea salt flakes and freshly cracked black pepper. Thick slices of mozzarella cheese (bocconcini or buffalo milk mozzarella) are layered on top, providing a creamy contrast.
The bruschetta balances the acidity and juiciness of tomatoes with the richness of mozzarella and the freshness of basil, enhanced by the toasted, slightly crunchy bread. A final drizzle of balsamic vinegar adds a bright, tangy note. The dish is served immediately to maintain the bread’s crispness and fresh flavors.

Ingredients
- 8 lices vienna bread or comparable wood fired bread, crusty
- 8 Roma tomato
- 1 purple onion small
- 1/2 bunch basil leaves
- 4 balls mozzarella cheese large bocconcini or regular mozzarella balls can be used as well, buffalo milk
- olive oil extra virgin
- sea salt flakes
- black pepper freshly cracked
- balsamic vinegar to drizzle
Instructions
- Slice the balls of mozzarella cheese into 4 slices each.
- Cut Roma tomatoes into lengthwise quarters (remove/discard seeds and juicy pulp).
- Dice remaining tomato flesh.
- Finely dice the purple onion.
- Slice the basil finely.
- Combine above ingredients with a few pinches sea salt, a few turns of the pepper mill and a few tbsps olive oil.
- Lightly toast or grill the bread slices, once toasted, rub one side with a peeled garlic clove.
- Place tomato mixture on bread slices and top with the slices of mozzarella.
- Drizzle with balsamic vinegar and serve immediately.
