Tomato Omelette
The Tomato Omelette combines sliced tomatoes cooked in butter and oil, topped with a seasoned beaten egg mixture enriched with mozzarella cheese and dried oregano. The omelette cooks covered until the eggs set, resulting in a tender, lightly spiced dish with a balance of juicy tomato slices and melted cheese. Garnished with coriander, it's a flavorful breakfast or brunch choice with a mildly spicy note from crushed chili and green chili slices.
Ingredients
- 10 g butter
- 1 tbsp neutral cooking oil generic cooking oil
- 2 large tomato
- 4 egg
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp chilli pepper crushed
- 1 green chilli
- 1 tsp oregano Dried
- 50 g mozzarella cheese
Instructions
- In a small bowl add the salt, black pepper, crushed chillies, finely sliced green chilli to the eggs then beat well with a fork until fully combined.
- In a skillet pan add the butter and oil then heat up until the butter has completely melted.
- Slice the tomatoes into 1cm thick slices then arrange on the pan in a single thin layer.
- Cook the tomatoes for 2-3 minutes on medium heat then flip over.
- Carefully pour the egg mixture on top of the tomatoes and top with the cheese and dried oregano.
- Cover and cook for 3-4 minutes until the eggs are cooked through.
- Garnish with finely chopped coriander
- Gently slide onto a plate and enjoy!
Notes
- Use fresh mozzarella cheese for optimal melting and flavor.
- Cilantro garnish adds a fresh herbaceous note to finish the dish.
