Tomato Omelette

The Tomato Omelette combines sliced tomatoes cooked in butter and oil, topped with a seasoned beaten egg mixture enriched with mozzarella cheese and dried oregano. The omelette cooks covered until the eggs set, resulting in a tender, lightly spiced dish with a balance of juicy tomato slices and melted cheese. Garnished with coriander, it's a flavorful breakfast or brunch choice with a mildly spicy note from crushed chili and green chili slices.

Description

This Tomato Omelette starts by beating eggs seasoned with salt, black pepper, crushed chili flakes, and sliced green chili for gentle heat. Butter and neutral oil are heated in a skillet, where sliced tomatoes are cooked briefly in a thin layer to soften them. The beaten eggs are carefully poured over the tomatoes, followed by a scattering of mozzarella cheese and dried oregano. Covered and cooked over medium heat, the omelette sets in about 3 to 4 minutes, allowing the cheese to melt and flavors to meld. The final dish presents a soft egg base with bright tomato slices and a mild spiciness from chilies. Garnishing with fresh coriander adds freshness just before serving.

The combination of butter and oil helps in even cooking of the tomatoes and eggs, preventing sticking and adding richness. The cheese adds a creamy texture that contrasts with the firm tomato slices. This omelette offers a filling and savory option for any meal of the day, with simple ingredients and straightforward preparation emphasizing the mild spice and freshness of the components.
