Tomato Peach Burrata Salad
Tomato Peach Burrata Salad combines ripe heirloom and grape tomatoes with sweet peach slices and creamy burrata cheese. It is seasoned simply with salt and pepper and finished with drizzles of olive oil and balsamic glaze. Fresh basil adds a herbaceous note, while optional grilled bread makes a nice accompaniment. Ingredients
- 2 heirloom tomato sliced, large
- 2 to 3 peach sliced, ripe
- 1 1/2 cups grape tomatoes halved, or cherry tomatoes
- 8 ounces burrata cheese drained and patted dry
- salt to taste, kosher salt and freshly ground
- black pepper to taste, kosher salt and freshly ground
- olive oil for drizzling
- balsamic glaze for drizzling
- basil for garnish, chopped, fresh
- bread for serving, optional, grilled
Instructions
- Arrange the sliced tomatoes, peaches, and grape tomatoes on a large platter. Break apart the ball of burrata cheese and arrange it on top of the salad. Season with salt and pepper.
- Drizzle with a little olive and balsamic glaze. Garnish with fresh basil. Serve with grilled bread, if desired.
