Tomato Salad
Tomato Salad of halved grape or cherry tomatoes combines fresh mozzarella pearls with a vinaigrette dressing made from olive oil, red wine vinegar, garlic, honey, and an herb blend. The salad is marinated briefly to allow the dressing to coat the ingredients, balancing acidity and sweetness with fresh herbs and creamy cheese.
Ingredients
- 1 3/4 lbs grape tomatoes or cherry tomatoes, halved (I like a blend of multi-color if you can find them)
- 1 (8 oz) pkg. mozzarella cheese fresh pearls
Dressing
- 1/4 cup extra virgin olive oil
- 3 Tbsp red wine vinegar
- 1 tsp minced garlic
- 1 tsp honey
- 1/4 cup chopped parsley fresh
- 2 Tbsp chopped basil fresh
- 1/2 tsp oregano dried
- black pepper freshly ground
- salt freshly ground
Instructions
- For the dressing: In a mixing bowl whisk together olive oil, red wine vinegar, garlic, honey, parsley, basil, oregano and season with salt and pepper to taste.
- In a medium salad bowl toss together tomatoes with dressing. Add mozzarella and toss.
- To allow flavors to infuse further let marinate for 30 minutes in the refrigerator, tossing once halfway through.
- Serve within a few hours of preparing.
Notes
- Substitute fresh mozzarella pearls with cubed block mozzarella if needed.
- White wine vinegar can replace red wine vinegar for a milder acidity in the dressing.
