The salad is marinated briefly to allow the dressing to coat the ingredients, balancing acidity and sweetness with fresh herbs and creamy cheese.

Description

This Tomato Salad starts with small tomatoes halved and tossed with a dressing of extra virgin olive oil, red wine vinegar, minced garlic, honey, and fresh chopped parsley and basil, along with dried oregano. Black pepper and salt season the mixture. Fresh mozzarella pearls are folded in for creaminess. After tossing, the salad is refrigerated to marinate for about 30 minutes, enhancing the flavor meld.

The combination delivers a bright, tangy, and slightly sweet dressing that complements the juicy tomatoes and mild, soft cheese. Fresh herbs add an aromatic freshness that lifts the overall taste.

This salad serves as a light, refreshing side dish that pairs well with grilled meats or as part of a summer meal. It is best enjoyed within a few hours of preparation to retain tomato texture and flavor.

If mozzarella pearls are unavailable, cubed fresh mozzarella can be used. Red wine vinegar can be swapped with white wine vinegar as a mild alternative.

Ingredients

  • 1 3/4 lbs grape tomatoes or cherry tomatoes, halved (I like a blend of multi-color if you can find them)
  • 1 (8 oz) pkg. mozzarella cheese fresh pearls

Dressing

  • 1/4 cup extra virgin olive oil
  • 3 Tbsp red wine vinegar
  • 1 tsp minced garlic
  • 1 tsp honey
  • 1/4 cup chopped parsley fresh
  • 2 Tbsp chopped basil fresh
  • 1/2 tsp oregano dried
  • salt freshly ground
  • black pepper freshly ground

Instructions

  1. For the dressing: In a mixing bowl whisk together olive oil, red wine vinegar, garlic, honey, parsley, basil, oregano and season with salt and pepper to taste.
  2. In a medium salad bowl toss together tomatoes with dressing. Add mozzarella and toss.
  3. To allow flavors to infuse further let marinate for 30 minutes in the refrigerator, tossing once halfway through.
  4. Serve within a few hours of preparing.

Notes

  • Substitute fresh mozzarella pearls with cubed block mozzarella if needed.
  • White wine vinegar can replace red wine vinegar for a milder acidity in the dressing.
