Ingredients

For the Soup:
  • 2 tablespoons olive oil
  • 2 yellow onion peeled and small diced
  • 4 garlic finely minced cloves
  • 1 dried guajillo chili
  • 2 28- ounce whole peeled tomatoes canned
  • 2 cups chicken stock
  • salt to taste
  • black pepper to taste
For the Toppings:
  • 1 peeled seeded, and large diced avocado
  • Mexican crema
  • cilantro leaves
  • chicken cooked shredded
  • tortillas fried

Instructions

    Cup of Yum
  1. In a large pot over low heat add in the olive oil and caramelize the onions and garlic well, about 45 minutes.
  2. Next, add in the tomatoes, chile, and chicken stock and simmer over low heat for about 25-30 minutes.
  3. Remove the chile and puree the soup until completely smooth. Return the soup back to the pot along with the chile and season with salt and pepper.
  4. Serve the soup with assorted optional toppings.

Notes

  • Make the soup up to two days ahead; keep toppings separate for best texture.
  • Store the soup in the refrigerator for up to 7 days; freeze for up to 3 months and thaw before reheating.
  • Reheat gently in a small saucepan, adjusting seasoning as needed.
  • Replace canned tomatoes with fresh tomatoes during summer for a brighter flavor.
  • Tortilla chips can be used instead of frying tortilla strips for the topping.
