Tortilla Soup Recipe
Description
This Tortilla Soup starts with slow caramelization of yellow onions and garlic in olive oil, allowing their sweetness to develop over 45 minutes. It is then combined with whole peeled canned tomatoes, a dried guajillo chili, and chicken stock, simmered gently to meld flavors before pureeing to a smooth consistency.
Seasoned with salt and pepper, the soup offers a mild chili flavor balanced with rich tomato and onion undertones. Served with toppings like diced avocado, Mexican crema, fresh cilantro, shredded cooked chicken, and crispy fried tortilla strips, it provides a contrast of creamy, fresh, and crunchy elements.
This soup can be prepared up to two days in advance, storing toppings separately to maintain freshness. It reheats gently and can be frozen for longer storage. Fresh tomatoes may replace canned in summer months, and tortilla chips can substitute for fried strips if preferred.
Ingredients
For the Soup:
- 2 tablespoons olive oil
- 2 yellow onion peeled and small diced
- 4 garlic finely minced cloves
- 1 dried guajillo chili
- 2 28- ounce whole peeled tomatoes canned
- 2 cups chicken stock
- salt to taste
- black pepper to taste
For the Toppings:
- 1 peeled seeded, and large diced avocado
- Mexican crema
- cilantro leaves
- chicken cooked shredded
- tortillas fried
Instructions
- In a large pot over low heat add in the olive oil and caramelize the onions and garlic well, about 45 minutes.

- Remove the chile and puree the soup until completely smooth. Return the soup back to the pot along with the chile and season with salt and pepper.

Notes
- Make the soup up to two days ahead; keep toppings separate for best texture.
- Store the soup in the refrigerator for up to 7 days; freeze for up to 3 months and thaw before reheating.
- Reheat gently in a small saucepan, adjusting seasoning as needed.
- Replace canned tomatoes with fresh tomatoes during summer for a brighter flavor.
- Tortilla chips can be used instead of frying tortilla strips for the topping.
