Toshikoshi Soba

Toshikoshi soba (dainen soba, sugomori soba) is a traditional Japanese noodle dish on Ōmisoka, which is New Year's Eve.

Ingredients

For the broth
  • 1 quart dashi stock
  • 4 tablespoons soy sauce
  • 4 tablespoons mirin
For the noodles
  • 14 oz. dry soba noodles
For the toppings
  • 4 shrimp tempura
  • 4 lices of kamaboko (a kind of Japanese surimi)
  • 4 scallions , finely chopped
  • shichimi togarashi (mixture of 7 spices, typically Japanese)

  1. In a Dutch oven, combine all the necessary ingredients for the broth and bring to a boil over medium to high heat.
  2. As soon as it boils again, turn off the heat and set aside.
  3. Cook soba noodles according to package directions. Drain them.
  4. Divide the noodles into 4 equal parts in separate bowls.
  5. Garnish the noodles with shrimp tempura, kamaboko and scallions.
  6. Pour broth over soba noodles and sprinkle with shichimi togarashi chili powder.
