Toshikoshi Soba

Toshikoshi soba (dainen soba, sugomori soba) is a traditional Japanese noodle dish on Ōmisoka, which is New Year's Eve.

Ingredients
For the broth
- 1 quart dashi stock
- 4 tablespoons soy sauce
- 4 tablespoons mirin
For the noodles
- 14 oz. dry soba noodles
For the toppings
- 4 shrimp tempura
- 4 lices of kamaboko (a kind of Japanese surimi)
- 4 scallions , finely chopped
- shichimi togarashi (mixture of 7 spices, typically Japanese)
Instructions
- In a Dutch oven, combine all the necessary ingredients for the broth and bring to a boil over medium to high heat.
- As soon as it boils again, turn off the heat and set aside.
- Cook soba noodles according to package directions. Drain them.
- Divide the noodles into 4 equal parts in separate bowls.
- Garnish the noodles with shrimp tempura, kamaboko and scallions.
- Pour broth over soba noodles and sprinkle with shichimi togarashi chili powder.
