Ingredients

  • pastry for double crust pie
  • 2 tb butter, salt and ground white pepper
  • 1 medium onion thinly sliced 1/4 c Milk
  • 1/3 c water
  • 1 large potato peeled, sliced thinly
  • 2 tb light cream
  • 1 lb Ouananiche or salmon cut into small pieces
  • 1 egg beaten with 1 Tb milk

  1. Line a 9-inch pie plate with pastry.
  2. Heat butter in a frying pan and saute onion until soft but not browned.
  3. Add the potatoes, fish, salt, pepper, milk, and cream, then mix gently to avoid breaking up the fish pieces.
  4. Arrange the mixture evenly in the pastry shell.
  5. Gently stir in water; it should fill and cover half the fish mixture.
  6. Cover with top second pie crust, trim, crimping edges to seal.
  7. Cut a small hole or make four cuts along the center.
  8. Brush the pastry with the beaten egg and milk.
  9. Place into the oven and bake in a preheated oven set to 375°F (190°C) and bake for 45 to 50 minutes or until the crust is golden brown.
