Traditional Chicken Salad

This classic chicken salad is easy to make and tasty by itself, on lettuce, or served as a sandwich. You're going to this family favorite!

Ingredients

  • 12 ounces shredded cooked chicken roughly chopped
  • 1 celery rib minced
  • 2 tablespoons minced onion sweet or red
  • 1/4 cup red grapes halved
  • 1/4 cup slivered almonds
  • 1/2 cup mayonnaise
  • 1 teaspoon lemon juice
  • 2 teaspoons whole grain mustard or dijon
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 pinch garlic powder
  • 4 croissants optional

Instructions

  1. Roughly chop 12 ounces shredded cooked chicken. Mince 1 celery rib and prepare 2 tablespoons minced onion. Halve 1/4 cup red grapes. Transfer to a large mixing bowl.
  2. Add 1/4 cup slivered almonds, 1/2 cup mayonnaise, 1 teaspoon lemon juice, 2 teaspoons whole grain mustard, 1/4 teaspoon salt, 1/4 teaspoon black pepper, and 1 pinch garlic powder.
  3. Stir until well combined and refrigerate until ready to serve.
  4. Serve as sandwiches on 4 croissants, or atop a bed of lettuce, or stuffed inside a tomato or avocado.
