They are so delicious served in a cup as is topped with a glazed cherry.

Ingredients
- 300 grams egg yolks 15 eggs, beaten
- 500 grams sugar 2 1/2 cups
- 500 grams of water 2 cups plus 1 tablespoon
- 10 grams vanilla extract 2 teaspoons
Instructions
- Place the sugar and water into a small pot and stir until the sugar dissolves.
- Bring the sugar mixture to a boil (100°C), then add the vanilla extract and stir.
- Beat the egg yolks until liquidy, then using a stainless steel cone-shaped funnel strainer, hold it over the pot and pour some of the egg yolks drizzling long strands in a circular motion into the boiled sugar syrup and cook for about one minute.
- Remove with a fork or slotted spoon and place into a round strainer over a bowl, sprinkle some cold water and allow the excess syrup can drain. The Fio De Ovos will have a bright yellow color to them.
- If you don’t have a cone strainer, put the egg yolks into a bag or piping bag and make small holes before drizzling.
- Repeat until all the egg yolks are cooked.
- Once the Portuguese egg threads are cooled, use a fork or chopstick to untangle the strands.
- Place into an airtight container and keep refrigerated until ready to use.
