Traditional Greek Tomato and Feta Toast

This delicious Mediterranean snack made with perfectly toasted crusty bread, topped with ripe summer tomato, drizzled with olive oil and sprinkled with crumbled tangy feta cheese is perfect for any time of the day.

Ingredients

  • 1 bread preferably sourdough you can also use whole grain, thick slice
  • 2-3 tsp red wine vinegar
  • 1-2 tomato medium
  • salt a pinch
  • 1 ½ tbsp feta cheese crumbled
  • 2-3 tsp extra virgin olive oil
  • ½ tsp oregano
  • 2-3 kalamata olives

Instructions

  1. Slice the bread 1-inch-thick
  2. Grate 2 medium tomatoes and drain
  3. Toast the bread either in a toaster or in a pan. This works nicely if your bread is not stale, the toasting hardens it a bit.
  4. Drizzle the bread with red wine vinegar.
  5. Spoon over the bread the grated tomato and sprinkle with oregano, then crumbled feta.
  6. Place a few olives on top and drizzle with olive oil.
