Traditional Irish Fruit Scones

Ingredients

  • 3 ¾ cups all-purpose flour
  • ½ teaspoon salt
  • ¼ cup sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ½ cup butter (1 stick )
  • 1 cup raisins dark or golden
  • 1 egg
  • ¾ cup buttermilk
  • 2 tablespoons milk or cream for brushing tops of scones

Instructions

  1. Preheat the oven to 450 degrees. Lightly grease a baking sheet or line it with parchment paper.
  2. Sift the dry ingredients into a large bowl.
  3. Cut in the butter until the mixture is coarse.
  4. After you've cut or rubbed in the butter, add the raisins.
  5. Beat the egg together with the buttermilk. Make a well in the center of the flour and add the liquids. Stir together just until a dough forms. Do not overmix.
  6. Turn out the dough onto a lightly floured surface.
  7. Cut the dough into 12 squares.
  8. Transfer the scones to the baking sheet. Brush with a bit of milk or cream.
  9. Bake for 12 to 14 minutes or until lightly golden brown. Cool slightly before serving.

Notes

  • For best results, make sure the butter is cold before cutting it into the flour.
  • Don't overmix the dough.
  • Cut the scones with a sharp knife.
  • Store leftovers at room temperature for up to 2 days or freeze for up to 3 months Reheat in the oven or microwave.
