Triple Berry Salad

This colorful Triple Berry Salad is a delicious combination of sweet, juicy berries, creamy goat cheese, and mixed greens, tossed in honey lime vinaigrette.

Ingredients

For the Salad
  • 5 ounces spring greens mix
  • 1 cup fresh strawberries
  • ⅔ cup fresh raspberries
  • ½ cup fresh blueberries
  • ½ cup sliced almonds toasted
  • ⅓ cup goat cheese crumbled
  • ⅓ cup Red Onions sliced thin
  • ¼ cup fresh mint chopped
For the Dressing
  • ⅓ cup olive oil
  • ¼ cup fresh lime juice
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon sugar-free honey
  • 1 teaspoon Dijon mustard
  • 1 clove garlic grated
  • ¼ teaspoon salt
  • ¼ teaspoon ground black pepper

Instructions

  1. Wash and dry your assortment of fresh berries. Slice the strawberries and set them aside.
  2. Add all the dressing ingredients into a dressing shaker or mixing bowl.
  3. Shake or whisk until well combined and emulsified, then set aside while you prepare the salad.
  4. Add the mixed greens to a large serving bowl. Add the fresh berries and red onion over the top of the greens.
  5. Add in the toasted almonds, goat cheese and fresh mint.
  6. Right before serving, pour the dressing over the top, toss and serve.
