This colorful Triple Berry Salad is a delicious combination of sweet, juicy berries, creamy goat cheese, and mixed greens, tossed in honey lime vinaigrette.

Ingredients
For the Salad
- 5 ounces spring greens mix
- 1 cup fresh strawberries
- ⅔ cup fresh raspberries
- ½ cup fresh blueberries
- ½ cup sliced almonds toasted
- ⅓ cup goat cheese crumbled
- ⅓ cup Red Onions sliced thin
- ¼ cup fresh mint chopped
For the Dressing
- ⅓ cup olive oil
- ¼ cup fresh lime juice
- 2 tablespoons apple cider vinegar
- 1 tablespoon sugar-free honey
- 1 teaspoon Dijon mustard
- 1 clove garlic grated
- ¼ teaspoon salt
- ¼ teaspoon ground black pepper
Instructions
- Wash and dry your assortment of fresh berries. Slice the strawberries and set them aside.
- Add all the dressing ingredients into a dressing shaker or mixing bowl.
- Shake or whisk until well combined and emulsified, then set aside while you prepare the salad.
- Add the mixed greens to a large serving bowl. Add the fresh berries and red onion over the top of the greens.
- Add in the toasted almonds, goat cheese and fresh mint.
- Right before serving, pour the dressing over the top, toss and serve.
