These Triple Berry Sugar-Free Gummy Bears combine fresh strawberry, raspberry, and blackberry juice with gelatin to create fruity, chewy gummies without added sugar. The juice and gelatin mixture sets firmly in silicone molds, resulting in bite-sized treats that showcase berry flavors in a lightly sweetened, gelatin-based candy form.

Description

The recipe begins by blooming gelatin powder in cold water to hydrate it before blending fresh strawberries, raspberries, and blackberries into a smooth juice. Straining the juice through muslin removes pulp and seeds for clarity. Half the juice is heated gently, and the bloomed gelatin is stirred in until dissolved, then combined with the remaining juice to preserve a vibrant color. Optional powdered erythritol can be added for sweetness, depending on berry ripeness. The mixture is spooned into silicone molds and chilled for two hours to set. The result is a chewy, fruit-forward gummy that offers a natural berry taste without refined sugars. The gummies can be stored in the refrigerator for several days before firmness diminishes.

  • ¾ cup / 115g strawberry halved
  • cup / 80g raspberry
  • ½ cup / 70g blackberry
  • 6 tablespoon gelatin powder grass-fed
  • ¾ cup / 180 ml / 6 fl oz water cold
  • optional: erythritol to taste, powdered

Instructions

  1. Place the gelatin into a bowl. Add the water and allow it to bloom whilst you make the berry juice. 
  2. Add the strawberries, raspberries and blackberries to a high speed blender and blitz until smooth.
  3. Pour into a muslin cloth and squeeze out the juice. Discard the pith. 
  4. Pour half the juice into a pan and warm on a low heat.
  5. Add the bloomed gelatin and mix until it dissolves.  
  6. Remove from the heat and add the rest of the juice. (Adding the juice in two parts ensures the gummy bears keep their colour.) Skim off any foam with a spoon. (TASTE the mix at this point. If you feel it needs a bit of extra sweetness, stir in 1-2 teaspoon of powdered erythritol). 
  7. Place your silicone jelly mould onto a flat surface and carefully add the triple berry gelatin juice to each gummy bear using a pipette. 
  8. Place in the fridge for 2 hours to set. 

Notes

  • Nutrition is calculated for 15 servings, each with about 10 gummies, though your mold size affects yield.
  • Store gummies in the refrigerator for up to 3 days to maintain texture.
  • Sweetness depends on fruit ripeness; add powdered erythritol to taste if desired.
  • Optional flavor enhancements include vanilla, cinnamon, lemon, or lime juice, which can also extend storage time.
